Pumpkin Chocolate Chip Cookies

I had a longer weekend than usual thanks to good ole' Christopher Columbus. My plan was to shun all responsibilities (hence no blog post yesterday), but unfortunately I couldn't run from them all and Steven managed to track me down and coerce me into helping him stain our fence. 

Not so bad though. It feels nice to be productive, even if my arms are aching this morning. Who knew painting could be such a work out??

In other news, our neighbor managed to accidentally run their car into our fence (not the portion we just finished putting up, thank God!), knock it down, and continue rolling until our front porch put a stop to it. 

No, I'm not kidding. Oh, how I wish I were though! 

So today, to help me get out of the sideways porch funk and to give you a reason for reading this post, here is my scrumptious pumpkin chocolate chip cookie recipe.
Ingredients:
1 cup canned pumpkin
1 cup sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking power
2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups chocolate chips

Directions:
Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, and cinnamon.nDissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mixx well. Then add the vanilla and chocolate chips. Drop by spoonful on greased cookie sheet and bake at 350 degrees for approximately 15 minutes. Enjoy!

Those cookies sound delicious! I can't believe a neighbor ran into your fence, that's crazy! Thank goodness they didn't hit your house or you.

Y.U.M!! Holy moly. Must make these IMMEDIATELY. Since they have no butter and only 1 egg, can we pretend they are healthy?

that sadly happens a lot where i live. our neighbor on the corner has a massive concrete wall instead of a fence and at least once a year, someone drives into it. its really funny and sad all at the same time.

those cookies look amazing!

Painting is hard work! I made some pumpkin chip cookies last night and they were delicious. Yours look like they belong in a cooking magazine!

Our house has 3 big boulders with short palm trees between them. We found out (after we bought it) that they are there because the house has been hit by cars twice! What the...? how does someone do that??
Hope it gets fixed soon!
