A few days ago me and Steven were talking about important things --like peanut butter cookies. He told me peanut butter cookies used to be his favorite, but now that he's not 7, he doesn't like them so much. Of course, this conversation sent me on a mission to find a delicious peanut butter cookie recipe on Pinterest. Mission complete, I can now introduce you to my NEW FAVORITE COOKIE. Seriously, they are that good.
Peanut Butter Cinnamon Cookies: 1 1/4 cups flour 1 tablespoon plus 1/4 teaspoon ground cinnamon, divided 3/4 teaspoon baking soda 1/2 teaspoon baking powder 1/4 teaspoon salt 1/2 cup (1 stick) butter, softened 3/4 cup granulated sugar, divided 1/2 cup firmly packed light brown sugar 1/2 cup creamy peanut butter 1 egg 1 teaspoon vanilla extract Mix flour, 1 tablespoon of the cinnamon, baking soda, baking powder and salt in medium bowl. Set aside. Beat butter, 1/2 cup of the granulated sugar, brown sugar, peanut butter, egg and vanilla in large bowl with electric mixer on medium speed until well blended. Gradually beat in flour mixture on low speed until well mixed. Refrigerate 2 hours or until firm. (Ok, I only refrigerated it for 30 minutes because I kept eating the dough and I knew if I didn't start putting these babies in the over --they'd all be gone soon.) |
Bake 8 to 10 minutes or until lightly browned. |

YUM! looks like a peanut butter cookie/snicker doodle. Whenever I make peanut butter cookies, they get really crumbly for some reason. I think that the dough isn't cold enough when I bake them. Anyway, these look amazing.
Yes. This looks like a great idea. I always put cinnamon on Pb toast. Why not in my cookies?!
I can't figure out why but there are peanut butter recipes ALLLLL over blogamania this week and I am so jealous. I have yet to find peanut butter (my favourite food) in France and I want to make all of these recipes!

I want to try this, but I only have white and dark brown sugar on hand most of the time. Can I replace the light brown sugar with dark?
